This mocktail is the perfect balance of sweet coconut water, refreshing mint and zingy lemon. It’ll cool you down with no alcohol in sight.

Method
- In a shaker, combine the juice of one freshly squeezed lemon, mint leaves (save two leaves for presentation), one handful ice cubes and coconut water. Shake vigorously.
- Divide remaining ice cubes among two glasses and pour over the mixture.
- Top with soda water.
- Garnish with mint leaves and serve.
